Our Steak and Vegetable Skillet recipe combines the robust, savory flavors of perfectly seared steak with the fresh, vibrant crunch of mixed vegetables. Our Steak and Vegetable Skillet is great because it is easy, low carb, and can be customized to include your favorite vegetables.
If you follow a carnivore diet or are sensitive to night shade vegetables, then simply cut the veggies and enjoy a steak only variation of the dish.
- 1 lb sirloin steak, cut into thin strips
- 2 tablespoons olive oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 green bell pepper, sliced
- 1 medium onion, sliced (optional)
- 2 cloves garlic, minced
- 1 crown of broccoli, cut into pieces
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh parsley, for garnish
Heat 1 tablespoon of the olive oil in a large skillet over medium-high heat.
Season the steak strips with salt and pepper, then add them to the skillet. Cook until they're browned on all sides, about 3-4 minutes. Remove the steak from the skillet and set it aside.
In the same skillet, add the remaining tablespoon of olive oil. Add the bell peppers and onion, and cook until they're softened, about 5 minutes.
Add the garlic and broccoli to the skillet. Sprinkle the vegetables with the dried oregano, and stir to combine.
Continue cooking until the vegetables are tender, about 5-7 more minutes.
Return the steak to the skillet, and stir everything together. Cook for another 2-3 minutes, until the steak is heated through.
Taste, and adjust the seasoning with additional salt and pepper if needed.
Garnish with fresh parsley before serving.
