Keto-Friendly Street Taco Recipe

Ingredients

For the Carne Asada:

  • 1.5 lbs flank steak or skirt steak
  • 1/4 cup olive oil
  • Juice of 2 limes
  • 3 cloves garlic, minced
  • 1/2 cup cilantro, chopped
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • Salt and pepper, to taste

For the Keto Tortillas:

  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1/2 teaspoon xanthan gum
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1 tablespoon water

Toppings:

  • 1 small red onion, thinly sliced
  • 1/2 cup chopped fresh cilantro
  • 1 avocado, peeled, pitted, and sliced
  • 1 lime, cut into wedges
  • Optional: salsa, sour cream, or crumbled cotija cheese

Instructions

Prepare the Carne Asada:

  1. In a medium-sized mixing bowl, whisk together olive oil, lime juice, minced garlic, chopped cilantro, ground cumin, chili powder, salt, and pepper.
  2. Place the flank steak in a large Ziploc bag or shallow dish, then pour the marinade over the steak. Make sure the steak is well-coated, then marinate for at least 30 minutes or up to 4 hours in the refrigerator.
  3. Preheat a grill or grill pan over medium-high heat. Remove the steak from the marinade and allow any excess to drip off. Grill the steak for 5-7 minutes per side, or until it reaches your desired level of doneness.
  4. Remove the steak from the grill and let it rest for about 5 minutes. Then, slice it against the grain into thin strips.

Prepare the Keto Tortillas:

  1. In a large mixing bowl, combine almond flour, coconut flour, xanthan gum, baking powder, and salt.
  2. Stir in the eggs and water, then mix until a dough forms. If the dough is too sticky, add a little more almond flour.
  3. Divide the dough into 8 equal portions and roll each portion into a ball.
  4. Place a ball of dough between two sheets of parchment paper and press it with a tortilla press or roll it with a rolling pin until it's about 1/8-inch thick.
  5. Heat a non-stick skillet over medium heat. Remove the top sheet of parchment paper and gently flip the tortilla onto the skillet. Cook for about 1-2 minutes per side or until lightly browned.
  6. Repeat with the remaining dough balls.

  1. Place a few slices of carne asada on each keto tortilla.
  2. Top with sliced red onion, chopped cilantro, and avocado slices.
