Total Time: 35 minutes
Yield: 8 tacos
Ingredients
For the Carne Asada:
- 1.5 lbs flank steak or skirt steak
- 1/4 cup olive oil
- Juice of 2 limes
- 3 cloves garlic, minced
- 1/2 cup cilantro, chopped
- 1/2 teaspoon ground cumin
- 1/2 teaspoon chili powder
- Salt and pepper, to taste
For the Keto Tortillas:
- 1 cup almond flour
- 1/4 cup coconut flour
- 1/2 teaspoon xanthan gum
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 2 large eggs
- 1 tablespoon water
Toppings:
- 1 small red onion, thinly sliced
- 1/2 cup chopped fresh cilantro
- 1 avocado, peeled, pitted, and sliced
- 1 lime, cut into wedges
- Optional: salsa, sour cream, or crumbled cotija cheese
Instructions
Prepare the Carne Asada:
- In a medium-sized mixing bowl, whisk together olive oil, lime juice, minced garlic, chopped cilantro, ground cumin, chili powder, salt, and pepper.
- Place the flank steak in a large Ziploc bag or shallow dish, then pour the marinade over the steak. Make sure the steak is well-coated, then marinate for at least 30 minutes or up to 4 hours in the refrigerator.
- Preheat a grill or grill pan over medium-high heat. Remove the steak from the marinade and allow any excess to drip off. Grill the steak for 5-7 minutes per side, or until it reaches your desired level of doneness.
- Remove the steak from the grill and let it rest for about 5 minutes. Then, slice it against the grain into thin strips.
Prepare the Keto Tortillas:
- In a large mixing bowl, combine almond flour, coconut flour, xanthan gum, baking powder, and salt.
- Stir in the eggs and water, then mix until a dough forms. If the dough is too sticky, add a little more almond flour.
- Divide the dough into 8 equal portions and roll each portion into a ball.
- Place a ball of dough between two sheets of parchment paper and press it with a tortilla press or roll it with a rolling pin until it's about 1/8-inch thick.
- Heat a non-stick skillet over medium heat. Remove the top sheet of parchment paper and gently flip the tortilla onto the skillet. Cook for about 1-2 minutes per side or until lightly browned.
- Repeat with the remaining dough balls.
Assemble the Keto Carne Asada Street Tacos:
- Place a few slices of carne asada on each keto tortilla.
- Top with sliced red onion, chopped cilantro, and avocado slices.
- Serve with lime wedges and optional toppings such as salsa, sour cream, or crumbled cotija cheese.
Enjoy your delicious and keto-friendly carne asada street tacos!
