Here's a simple recipe for Pizza Soup. Modify to include your favorite pizza toppings. Might not taste great with pineapple though.
Pizza Soup Recipe
- 1 lb Italian sausage or ground beef
- 1/4 medium onion, chopped
- 3 cloves garlic, minced
- 1 can (28 ounces) diced tomatoes
- 1 small can (8 ounces) tomato sauce
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 4 cups beef broth
- 3 table spoons of extra virgin olive oil
- 1 cup penne pasta (optional)
- 1 cup shredded mozzarella cheese
In a large pot over medium heat, cook the sausage, breaking it up with a spoon, until browned and no longer pink. Remove the sausage from the pot with a slotted spoon and set aside.
Add the chopped onion to the same pot and cook until softened and translucent, about 5 minutes. Add the minced garlic and cook for another minute.
Add the diced tomatoes, tomato sauce, oregano, basil, salt, and black pepper flakes to the pot. Stir well.
Add the beef broth to the pot and stir again. Bring the mixture to a boil.
Once boiling, add the penne pasta to the pot. Reduce the heat to low and let the soup simmer until the pasta is cooked, about 10-15 minutes.
Return the cooked sausage to the pot and stir to combine.
Serve the soup hot, top with the mozzarella. Garnish with fresh basil and red pepper flakes if desired. You can also melt the cheese in the soup prior to serving.
