Chicken Pineapple Skewers

Here's a simple recipe for Chicken Pineapple Skewers that are perfect for BBQs, tailgating, or even as an appetizer. These kabobs are also a great lunch option for picky kids.

Ingredients

  1. 2 pounds boneless chicken breast, cut into chunks
  2. 1 large pineapple, cut into chunks
  3. 1/4 cup of low sugar ketchup
  4. 1/4 cup of coconut aminos
  5. 1/4 cup of honey
  6. 2 tablespoons of olive oil
  7. 1 tablespoon of rice vinegar
  8. 3 cloves of garlic, minced
  9. Light chili powder to taste
  10. Chives (optional)

Instructions

  1. In a large mixing bowl, whisk together the ketchup, honey, coconut aminos, olive oil, rice vinegar, and minced garlic. This will be your marinade.
  2. Add the chicken pieces to the bowl and let them marinate for at least an hour, or overnight if possible.
  3. Preheat your grill to medium heat.
  4. Thread the marinated chicken pieces and pineapple chunks onto skewers, alternating between the two.
  5. Grill the skewers for about 15 minutes, turning occasionally, until the chicken is fully cooked and the pineapple is caramelized.
  6. Sprinkle lightly with chili powder and chives to taste (optional).
