Italian Style Air Fryer Cod (Baccala)
Ingredients:
- 4 6-oz Cod fillets
- Freshly squeezed juice and zest from 1 lemon
- 2 tbsp Olive oil
- Salt and pepper to taste
- Flour for dredging
- 1 egg, beaten
- Panko crumbs or coconut flower for coating
- Optional: Parmesan cheese for added flavor
Note: True Baccala uses salted cod. This is an acquired taste, so un-salted cod is fine too.
Instructions:

If using salted cod, soak it in cold water for 24-48 hours, changing the water 2-3 times a day, to remove excess salt. Pat the cod dry with a paper towel.

Marinate the cod fillets with lemon juice, lemon zest, olive oil, salt, and pepper. Let them rest for about 15 minutes so the flavors can infuse.

Preheat your air fryer to 400°F (200°C).

Dip each cod fillet first in flour, shaking off the excess, then in the beaten egg, and finally in the Panko breadcrumbs. Make sure the fillets are evenly coated. If you prefer, mix some grated Parmesan cheese into the breadcrumbs for extra flavor.

Place the breaded cod fillets in the air fryer basket, making sure they don't overlap.

Cook the cod in the air fryer for about 10-13 minutes, or until the coating is golden brown and crisp. The internal temperature should reach 145°F (63°C).
